Gift #47: Caprese Salad

Today was very hot and humid and the perfect day for a nice, refreshing salad for supper.  My mom and I had this yummy salad when we were at the Denver Botanical Gardens, at the Offshoots Cafe.  Isn’t that a cute name for a garden restaurant?

It’s very easy to fix.  It’s just lettuce, tomatoes, fresh mozzarella cheese, and thinly snipped basil.  Then drizzle it with honey mustard.  The dressing can be freshly prepared, or courtesy of Kraft, either way, it tastes great.  Mom made this great salad for us this evening and then we went to Hobby Lobby.  Talk about a nice evening!
