Finally! I remembered to take a picture before I snarked down the food. Usually, taking a picture is an afterthought as I’m savoring my last bite. This is my new favorite food for the summer months. It’s easy to make and absolutely delicious. The hardest part for me is finding the naan bread because its availability tends to wax and wane with the moon. (Fortunately naan bread freezes well) If you’d like to taste the yumminess for yourself, its made by brushing the naan bread (I like the garlic flavor) with olive oil, then grilling slightly. Slather pesto upon the naan bread and add tomato slices and cover with mozzarella cheese. Sprinkle with fresh basil and heat until cheese is melted.
Then, eat and enjoy a slice of heaven.
