Gift #290: Beet and goat cheese quiche

For dinner tonight I enjoyed a most excellent quiche made with beets and goat cheese.  I was originally planning to make a fig/goat cheese quiche with a recipe I found on pinterest.  Unfortunately, I couldn’t find any fresh figs over the weekend.  While in the grocery store, some fresh beets caught my eye and out came Isabella the Ipad, who quickly proffered several recipes for beet quiche.  The one I settled on took advantage of a premade pie crust, sparing me the trauma of making my own. So last night I got busy roasting beets, sautéing leeks and onions, and whipping up eggs and cream.   Fun!  And, oh my goodness, did the kitchen smell so wonderful with all the fresh vegetables cooking!  I love, love, love roasting veggies.  Even vegetables I don’t like are yummy roasted!  The quiche came out great and the beets make it look so beautiful.  I enjoyed it with some steamed broccoli, making a wonderfully satisfying dinner.
